PENGEMBANGAN PENGOLAHAN PEDO DENGAN METODE FROZEN (PERZON)

The purpose of developing this pedo processing is to minimize the fish from spoiling quickly and stay fresh with PEDO FROZEN (PERZON) processing. Hearing the word pedo or what is commonly called pedo fish may be familiar to the people of South Sumatra. Pedo is a fermented fish product using salt and roasted rice. The South Sumatra region is very abundant in fish because it is traversed by rivers as a potential supporter in the fisheries sector, especially freshwater fisheries, both capture and cultivation. The fermented fish is Tilapia because this fish experiences physical damage after 2 hours of death, so one simple way that can be done to extend the shelf life of Tilapia to make it last longer is to carry out a preservation process in the form of fermentation. Apart from that, with the frozen process, it will extend the freshness period of the Pedo and in the future Pedo will be innovated with flavor variants, thus we can expand market share.
